Substitutions

It is way too easy to think you have everything for a recipe then realize that another family member got hungry and ate it or that you just don't have enough. Sometimes you have neighbors to your rescue, but sometimes it is just as easy to substitute. Although some of these may slightly alter the taste of your recipe, they will do the trick.

Brown Sugar (Makes 1 cup, packed) - Generous 3/4 of a cup sugar plus scant 1/4 cup of molasses, 1 1/4 cups confectioners sugar, 1 cup white sugar

Butter (Replaces 1 for 1) - Canola Oil, Shortening, Applesauce, Greek Yogurt 
{Note that some of these work better than others in certain recipes}

Buttermilk (Replaces 1 cup) - 1 cup milk plus 1 tablespoon lemon juice

Eggs (Per Egg) - 1/4 cup applesauce, 1/2 mashed banana
 {Note that eggs are leaveners so the item you bake may be denser, but brownies, for example, are fine}

Lemon Juice (Replaces 1 for 1) - Vinegar

Molasses (Replaces 1 for 1) - 1 cup corn syrup/maple syrup/honey, 3/4 cup brown sugar, 3/4 cup granulated sugar plus 1/4 cup water

Shortening (Replaces 1 for 1) - Butter

Sour Cream (Replaces 1 for 1) - Yogurt

Vanilla Extract (Replaces 1 for 1) - Maple Syrup/Extract, Almond Extract, Vanilla Milk 
{Make sure that you choose the best substitute for your recipe}

Vinegar (Replaces 1 for 1) - Lemon Juice

Yogurt (Replaces 1 for 1) - Sour Cream
